You can't. If you need to have the page be a certain size, then after cropping, go the Image menu > Canvas Size. When you increase the size of the page, the pixels that you add will be white, so make sure you add them to a side that already has white (does that make sense?). Alternatively, you can resize the image, but that always decreases the quality. My vote is to make changes to the canvas.

You could try warping. Some people clone if necessary. The bottom line is that it's going to take a lot of time (though it does depend on the complexity of the art), and I personally don't think it's worth the time. I'm a little cynical, though, and I'm definitely burned out from doing extensive redraws. Usually, the most I'll do is run the Dodge Tool over the gutter to get rid of the gray shadows. If you decide to fix the gutters, then good luck and I admire your patience XD

I have a question/request; I have pages that have been scanned without being debinded. So I have a little curve on all of them. How would I fix that? Warping?

I think it's the same, but the crop tool will give you the shading box if you click the check. It's not a huge thing, though, so go with whatever you're most comfortable with ;)
